Raita Stuffed Cucumber Cups with Roasted Madras Garbanzo Beans
Can clean eating get any more elegant? Cucumber cups stuffed with a simple and easy raita and then topped with crisp garbanzo beans roasted with Madras spices. Great as appetizer, healthy snack or even a light meal.
1 x 15 ounce can garbanzo beans, drained, rinsed and patted dry
2 1/2 tablespoons vegetable or olive oil
1/2 teaspoon cayenne pepper powder
1/2 teaspoon coriander powder
1/4 teaspoon fennel seeds
1/4 teaspoon salt
1/8 teaspoon turmeric powder
1/8 teaspoon cumin powder
Raita stuffed cucumber cups
1/2 cup greek yogurt
1 tablespoon finely minced onion
1 tablespoon finely minced cilantro
1/4 teaspoon salt
1 pinch cayenne pepper powder
1 pinch garam masala powder
1 pinch sugar
1 English cucumber
Additional cilantro, for garnish
