Raspberry Chocolate Chip Banana Bread
Deliciously moist banana bread studded with dark chocolate chips and fresh raspberries. It’s a fun breakfast, or a lovely accompaniment to your mid-morning or afternoon tea (or coffee). Plus, it’s much healthier than most banana breads!
½ cup rolled oats
2 cups mashed bananas (approx. 4)
2 eggs
2 tablespoons canola oil
⅔ cup vanilla-flavored yogurt
⅓ cup buttermilk
1 tablespoon vanilla extract
¼ cup plus 2 tablespoons brown sugar, packed
2 teaspoons blackstrap molasses
2 cups spelt flour
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon salt
½ cup dark chocolate chips, plus extra
1 cup fresh raspberries mixed with 1 tablespoon spelt flour
