Raw Vegan Swiss Roll
Here’s a delicious raw vegan Swiss roll recipe. This roll is really easy to make, requires no cooking and combines two of my favorite tastes: chocolate and coconut. I used coconut oil in both my brown and white parts, but if you want, you can use ½ cup of dried fruit of your choice instead of the coconut oil in your dark layer. Also, I replaced some of the nuts, seeds and coconut with oat flour or ground oats, but this is optional too. You can use nuts and seeds of your choice; I combined almonds and sunflower seeds.
For the dark layer:
½ cup of nuts/seeds of your choice
½ cup of oat flour or ground oats
3-4 tablespoons of cocoa powder
3 tablespoons of coconut oil (or ½ cup of dried fruit of your choice)
2 tablespoons of maple syrup
For the white layer:
½ cup of shredded coconut
1/3 cup of oat flour
2 tablespoons of coconut oil
2 tablespoons of maple syrup
