Red Lentil & Veg Marinara
A fun way to upgrade your average pasta sauce, while still keeping it simple! The addition of lentils and veggies really pumps it up! It’s all the familiarity of a dinnertime classic, but charged with lightning! For extra obfuscation, you could always take an immersion blender to the whole thing and make it simply “red sauce” that, while nutritionally complex, looks and tastes as simple as something served straight from a jar! (You can even serve it in a jar!)
2 carrots, finely diced
2 stalks celery, finely diced (and/or ½ an onion, diced)
1 red bell pepper, finely diced
2 Tablespoons minced garlic
1 Tablespoon olive oil or 1-2 Tablespoons broth (for sauteing)
1 14.5 oz can TJ’s fire roasted tomatoes and chilis
1 26 oz jar TJ’s organic no salt added marinara sauce
1 cup red lentils
1.5-2 cups veggie broth (depending on desired consistency- one can should be enough!)
½ Tablespoon dried basil
½ Tablespoon dried oregano
½ Tablespoon dried parsley
¼-½ teaspoons salt
ground black pepper, red pepper flakes, white pepper to taste
