6-8 garlic cloves, roasted
½ cup olive oil, divided
2 cups fresh spinach
1 cup shiitake mushroom
1 cup heirloom quinoa
1 small white onion
1 tsp sugar
salt and pepper, to taste
6-8 hard boiled eggs (optional)
