Roasted Potato Green Salad with Tahini-Lime Dressing
This salad is the perfect mixture of hearty and light, being filling, but also healthy and chock full of vegetables. Roasted potatoes, lettuce, veggies, nuts and seeds are tossed with a tahini-lime dressing to make the perfect salad entree.
1 potato, large dice
1 tablespoon olive oil
2 cups Boston or romaine lettuce, washed and chopped
2-3 green onions or 1-2 tablespoon chives
2-3 radishes, thinly sliced
¼ cup snow peas, sliced (you can also sub snap peas, or use peas themselves as well)
1 tablespoon pepita seeds
1 tablespoon slivered almonds
Juice of one lime
¼ cup tahini
¼ cup cilantro
1 tablespoon water
1 tablespoon olive oil
1 ½ teaspoon lemon thyme (or regular thyme)
1 teaspoon maple syrup, honey or agave
