Roasted tomatoes make the most flavorful vinaigrette with little oil and no sugar.
Ingredients
1 pint cherry tomatoes (or cut large tomatoes into cubes)
1 garlic clove, peeled and diced
2 tablespoons red wine vinegar
1/2 teaspoon salt
pinch black pepper
handful of parsley or basil (1/2 teaspoon dried Italian seasoning works too)
1/4 cup olive oil
