These energy chunks are SO good, you will think your cheating! But they’re filled with healthy fats, fiber, protein and carbs to keep your energy lasting throughout the day.
Ingredients
¼ cup + 2 Tbs coconut oil
¼ cup + 1 Tbs unsweetened cacao powder
3 Tbs maple syrup
2 Tbs peanut butter, or other nut butter
1 Tbs milk of choice
½ tsp vanilla extract
8 pitted dates, soaked in boiling water for at least 10 minutes
¾ cup puffed brown rice cereal
8 vegan friendly marshmallows, chopped up small
¼ cup pistachio
1 Tbs chia seeds
