For the beet-carrot filling:
½ cup grated carrots
½ cup grated beetroots
¼ cup thinly sliced onions
Juice of half a lemon/lime
3 tablespoons chopped coriander leaves/cilantro
Salt to taste
2 finely chopped green chillies/jalapenos (optional)
For the green chutney:
1 cup coriander leaves/cilantro
½ cup mint leaves
3 to 4 green chillies/jalapenos
2 to 3 cloves of garlic
Juice of half a lemon/lime
Salt to taste
For the red chutney:
1 medium onion, cubed
2 tomatoes, chopped
2 cloves of garlic or ginger
1 teaspoon red chilli powder
1 small marble size tamarind or ½ teaspoon tamarind paste
Salt to taste
2 teaspoons of cooking oil
