These savory muffins are moist, delicious and packed with zucchini! They’re a perfect way to use some of that zucchini everyone has at this time of year.
Ingredients
2 eggs
½ cup low-fat ricotta cheese
¼ cup freshly grated parmesan cheese
2 zucchini, grated/shredded
2 tablespoons chopped fresh parsley
1 tablespoon olive oil
1 tablespoon canola oil
¾ cup milk
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 ½ cups spelt flour
