Secret Ingredient Pistachio Muffins

Healthy vegan muffins that are gluten-free and refined sugar-free. You’ll never guess what makes them green! (unless you look at the ingredients…)
Ingredients
2 cups oat flour
1/4 cup almond meal
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted pistachios, shelled
1/2 cup spinach leaves
1/4 cup unrefined coconut oil
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 cup maple syrup
3/4 cup unsweetened vanilla almond milk
sweetened shredded coconut flakes, toasted (I recommend Trader Joe’s brand)
