A savory Middle Eastern egg dish perfect for any meal of the day!
Ingredients
1 medium yellow onion, diced
3 cloves of garlic, minced
2 (14 oz) cans of fire roasted diced tomatoes
1 serrano chile, seeded and sliced
2 tablespoons tomato paste
2 cups of raw kale, sliced into small strips
1 red bell pepper, diced
1/4 bulb of fennel, diced
4-6 eggs (depending on the size of your skillet)
1 teaspoon smoked paprika
1 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon dried basil
1 tablespoon apple cider vinegar
2 tablespoons extra virgin olive oil
freshly ground black pepper and fine sea salt
