This vegan noodle salad is refreshingly tasty and super easy to make. Less than 300 calories a massive serving!
Ingredients
1 tbs canola oil
1 tsp red pepper flakes
1 tbs Sichuan peppercorns
4 7-oz bags shirataki noodles, drained
1 medium hothouse cucumber, peeled, seeded and thinly sliced
1/2 cup scallions, sliced
1 cup cilantro, chopped
1 tbs garlic, minced
1 tbs fresh ginger, minced
1/2 c tahini
2 tbs white vinegar
1 tbs balsamic vinegar
2 tbs soy sauce (use tamari for gluten-free)
3 tbs sugar
