A simple cookie packed with plant-based protein, healthy fats from nuts and seeds, and extra nutrients from superfood goji berries. Gluten free and post workout friendly.
Ingredients
1 cup pecans, chopped
½ cup rolled oats
½ cup chickpea flour
4 tablespoons plant-based protein powder (optional yet recommended. If not using, use 4 extra tablespoons of chickpea flour)
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon sea salt
2 tablespoons sesame seeds
2 eggs
⅓ cup melted coconut oil
1 teaspoon vanilla
¼ cup goji berries
