Simple Vegan Southwestern Scrambled Tofu

This version of scrambled tofu is full of veggie goodies and flavours. It is my absolutely favourite Sunday morning breakfast!
Ingredients
110 g (a quarter of a big block of) extra firm tofu
1 small onion, minced
¼ red pepper, diced
½ zucchini, diced
3 white button mushrooms, diced
Small handful of spinach, sliced finely
A good handful of Daiya grated vegan mozzarella cheese
1-2 tbsp salsa
pinch of turmeric
Soya sauce
1 clove garlic, minced
Salt & pepper
Oil
