Slow Cooker Zucchini Lasagna

This lasagna is going to become your favourite lasagna recipe, not only because I used zucchini instead of noodles, but also made it in the slow cooker.
Ingredients
15 oz part-skim ricotta
1 large egg
1/4 cup freshly grated Parmesan cheese
1 cup spinach, chopped
Salt and pepper
4 cups homemade tomato sauce or your favorite sauce
4 medium zucchini, sliced 1/8″ thick
16 oz part-skim mozzarella cheese, shredded
2 tbsp parsley, chopped
