These lovely, light, smokey, cheesey little beignets are likely to disappear pretty soon after you have made them. They’re perfect served with a good quality relish.
Ingredients
75 g organic plain flour
50 g butter
40 g Little Hereford Smoked (or other hard, smoked cheese)
½ tsp smoked sea salt
2 free range organic egg yolks
15 g fresh chives, finely chopped
150 ml water
groundnut oil, for frying
