Inspired by our favorite beer cocktail the Snakebite. This moist and gluten-free molasses stout cake is topped with an apple cider ale cream cheese frosting.
Ingredients
2 cups Gluten-Free Baking Flour (I used Bob’s Red Mill)
1 cup Gluten-Free Stout (I used RedBridge)
1 cup Molasses
1/2 cup Granular Stevia in the Raw
1/3 cup Coconut Butter
1 egg
2 teaspoons Cinnamon
1 teaspoon Baking Powder
1 teaspoon Xanthan Gum
1/4 cup Apple Cider Ale
2 tablespoons Coconut Butter
8oz Greek Cream Cheese
2 tablespoons Stevia
1 tablespoon Agave syrup (to taste)
1 teaspoon Vanilla extract
