These Southwestern Salads with Black Bean Falafel are healthy, flavorful, and topped with a luscious creamy cilantro dressing!
Ingredients
For the Black Bean Falafel:
2 cans black beans, drained and rinsed
1/2 red onion diced
1 jalapeno, diced (I didn’t use the seeds)
1 cup cilantro leaves
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon chili powder
1/2 lime, juiced
pinch salt and pepper
For the Salad:
2-3 cups romaine lettuce, chopped
2 small tomatoes, sliced
1/2 cup frozen corn, defrosted
1/4 cup cilantro leaves
1/4 cup red onion, diced
