Hearty, comforting, and warming gnocchi that are vegan and made with wholesome spelt flour!
Ingredients
SUN-DRIED TOMATO SAUCE:
1 cup sun-dried tomatoes, drained but keep the oil
1 cup packed fresh basil
¼ cup tomato paste
¼ cup + 1 Tbs oil from sun-dried tomatoes
2 small cloves garlic
2 big pinches of cane sugar
big pinch of pepper
GNOCCHI:
4 large Idaho potatoes (russet)
2 cups spelt flour, more or less as needed
1 tbs extra virgin olive oil
pinch of salt, to taste
