Spicy CrockPot Sweet Potatoes

Make these Spicy CrockPot Sweet Potatoes and free up space in the oven for other good things. And these sweet potatoes are amazing.

4 lb. orange-fleshed sweet potatoes (4 large or 5 medium sweet potatoes)
2-3 T olive oil, divided
non-stick spray for crockpot
1 T sweet potato spice mix
fresh ground black pepper to taste
sea salt to taste (I used a sea salt grinder)
2-3 T butter to add to the top of the sweet potatoes (optional, use more or less to taste)
