These muffins are spicy with the perfect touch of sweetness to balance them out!
Ingredients
2 Tbs ground flax seeds + 6 Tbs hot water
¾ cup buckwheat flour
¾ cup oat flour
¼ cup almond flour
1½ tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
½ tsp ground ginger
½ tsp fine sea salt
1 Tbs non-gmo cornstarch
1 cup almond milk (or milk of choice)
2 Tbs unsweetened apple sauce
¼ cup + 1 Tbs molasses
¼ cup + 1 Tbs maple syrup
2 Tbs coconut oil, melted
1 cup crystalized ginger, chopped
