So this potato hash browns recipe is a little black dress of a dish. Quietly efficient, and capable of multitasking. A super yummy herb and spice laden mix of new potatoes and peas. Quick, easy, flavourful and low fat, this dish is vegan, dairy and gluten free too.
Ingredients
750g (1.5lb) new potatoes
2 teaspoons olive oil
1 onion
1 clove garlic
half inch cube (1cm) ginger
3/4 teaspoon cumin
half teaspoon turmeric
3/4 teaspoon garam masala
2 teaspoon mustard seeds
half a small green chilli
75g (half cup) peas
salt and pepper to taste
1 teaspoon of lemon juice
2 tablespoons flat parsley
