Sriracha Miso Glazed Vegetable Sushi

These sushi rolls are super delicious and easy to make! They are loaded with carrots, tofu, and avocado and accompanied by a beautiful sriracha miso glaze!
Ingredients
SUSHI RICE:
1½ cup sushi rice
2 cups water
2 Tbs rice vinegar
1 Tablespoon cane sugar
½ tsp salt
GLAZE:
3 Tbs miso
3 Tbs maple syrup
2 Tbs sunflower oil (or other neutral flavored oil)
1½ tsp sriracha (or to taste)
ROLLS:
6 sheets nori
1 block extra firm tofu, drained and pressed
1 16oz bag carrots (about 15 medium carrots)
1 avocado, sliced thin
