Strawberry Pistachio Oat Bars
These healthy strawberry oat bars are vegan, gluten-free & refined sugar free. Made with almond flour, oats, pistachios and a touch of cardamom. Delicious!
Crust:
1 tbsp chia seeds + 3 tbsp water
1 cup rolled oats (certified gluten-free if necessary)
1½ cup oat flour (you can make your own by grinding oats in your food processor)
½ cup almond flour
½ tsp baking powder
¼ tsp ground cardamom
½ tsp sea salt
¼ cup melted coconut oil
⅓ cup pure maple syrup
1½ tsp pure vanilla extract
⅓ cup raw, unsalted pistachios, roughly chopped
Strawberry Filling:
2 cups diced strawberries
1 tbsp pure maple syrup
½ tsp pure vanilla extract
1 tsp lemon zest
