Sumptuous but light sweet corn soup with minimal spices and loaded with lots of crunchy vegetables.
Ingredients
½ cup frozen corn or fresh corn
¼ cup finely chopped carrots
¼ cup finely chopped bell pepper/capsicum
¼ cup finely chopped cabbage
¼ cup finely chopped red bell pepper
¼ cup finely chopped onions
2 green chillies/jalapenos, slit vertically
1 teaspoon each finely chopped ginger and garlic
1 tablespoon cornflour
1 tablespoon butter
1 tablespoon oil
1 teaspoon vinegar
Salt to taste
¼ teaspoon crushed black pepper
Green onions or coriander leaves/cilantro for garnishing
