Sweet ‘n’ Spicy Stuffed Roasted Long Hots

Sweet or spicy long hot peppers are stuffed full of red onions, squash, chickpeas and spices, then roasted until the veggies are tender and the pepper is caramelized. Filling, gluten-free, vegan, sweet and mildly spicy, this dish is sure to hit the spot!
Ingredients
1 long pepper (I like long hots for some kick, but feel free to use sweet peppers too!), halved lengthwise and seeded
¼ cup red onion, finely diced
½ cup butternut squash, diced
¼ cup chickpeas
2 cloves garlic, minced
Pinch of both cinnamon and nutmeg
1 tablespoon olive oil
1 teaspoon sumac
Salt and pepper, to taste
