Ingredients
2 large sweet potatoes
1 clove garlic, finely chopped
¼ cup cashew or almond butter
¼ cup chia seeds
½ teaspoon salt
Fresh ground pepper
1 tablespoon coconut oil, melted
1 avocado, sliced
1 cup cherry or grape tomatoes, halved
3 tablespoons olive oil (or you can use non-stick coconut oil spray) for frying
Juice of 1 lime
cilantro (optional)
