Tex Mex Stuffed Peppers
Whole grain, black beans, roasted poblano, spices and veggies come together in bell peppers for this hearty Tex Mex dish.
1/2 C Long Grain Brown Rice
1 C Water
1/3 C Canned Fire Roasted Tomatoes, including juice
1 Poblano Pepper
4 Large Green Bell Peppers
1 15 oz Can of Black Beans
1 C Zucchini, diced
1 C Purple Onion, diced
1 C Corn, fresh off the cob or frozen
1 Tbs Garlic, minced
1/2 Tbs Coconut Oil, melted and cooled + Coconut Oil Pan Spray
1/2 C Monterey Jack Cheese, grated (pepper jack if your feeling spicy!)
3/4 tsp Sea Salt
1 Tbs Ground Cumin
1 tsp Oregano
1 1/2 tsp Chili Powder
1 1/2 Hot or Sweet Smoked Paprika
1/3 C Cojita Cheese, crumbled (or more Monterey Jack Cheese)
