These Toasted Coconut Dark Chocolate Oatmeal Cookies are the perfect balance of crispy and soft, loaded with melty dark chocolate and nutty toasted coconut! Made with whole wheat flour and coconut oil.
Ingredients
1 cup whole wheat pastry flour
1 1/2 cup old fashioned oats
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup coconut oil, melted and cooled
1/2 cup coconut sugar
2 teaspoons vanilla extract
1 egg
1/2 cup unsweetened shredded coconut
1/2 cup dark chocolate chips (I used Ghirardelli)
