Toasted Oat and Coconut Muesli
This is my working husband’s new favorite breakfast. You could call it toasted muesli or overnight oats. It’s very simple to make and to prepare; just assemble the night before and enjoy the next morning at home, on the go or at work.
This recipe calls for toasted oats, toasted coconut, crystallized ginger, almonds, chia seeds and spices. By toasting the oats, they become more fragrant and tasty.
2 cups old-fashioned oats
1/2 cup unsweetened coconut flakes
1/4 cup chopped almonds
1/4 cup chopped dark chocolate covered almonds
1/2 cup chopped candied ginger
1/4 cup chia seeds
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt
To Serve:
frozen or fresh fruit
cold milk of your choice (I used vanilla almond coconut)
yogurt (optional)
pure maple syrup or honey
