Tofu Curry Stuffed Delicata Squash

The comforting flavors of indian cuisine merged with a fall favorite – delicata squash (V, GF)
Ingredients
1 block tofu, pressed and cut into ½ inch cubes
2 small/medium delicata squash
2 tsp coconut oil – melted
2 Tbs Ghee (or coconut oil)
½ a yellow onion, finely minced
1 clove garlic, minced
1½ inch chuck ginger, grated
¼ cup vegetable brother or water
1 Tbs maple syrup, and a little drizzle more
1½ Tbs whole grain mustard
2 tsp curry powder
1 tsp onion powder
1 tsp cinnamon
½ tsp mustard powder
½ tsp salt
¼ tsp cumin
⅛ tsp turmeric
1½ tsp nutritional yeast
handful of cilantro
1 cup cooked brown rice (or other grain), optional
