Tunisian chickpea and prune couscous

This Tunisian chickpea couscous is so full of exotic flavors, you’ll think you’re on a terrace in Sidi Bou Saïd. It is fresh, a bit sweet and deliciously filing.
Ingredients
1 can chickpeas ( 540 ml)
1 tsp chili powder
2 medium carrots, cut in chunks
2 cups cauliflower fleurets
1 onion, cut in chunks
1 tbsp fresh ginger, chopped finely
4 garlic cloves, chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric powder
1 tsp cinnamon
1 can (796ml) whole tomatoes
½ cup prunes
1 cup water
1 cup couscous
salt
