Beets give these beet blueberry muffins a gorgeous colour and a nutrition boost! The muffins are easy to make, super moist and fluffy, and studded with bursts of blueberry.
Ingredients
1 small roasted beet
¾ cup almond milk
¼ cup coconut sugar
2 tbsp maple syrup (or to taste)
1 tsp vanilla extract
1 cup spelt flour
1 tsp baking powder
½ tsp baking soda
handful of blueberries, fresh or thawed from frozen
