Vegan Blueberry Crumb Muffins
Soft, sweet muffins studded with blueberries and loaded with crumb topping. These vegan blueberry crumb muffins are healthy, gluten free and naturally sweetened!
Muffins:
1 1/2 c whole grain rolled oats, ground into flour
1 c coconut flour
1 flax eggs – 1 tbsp ground flaxseed with 3 tbsp water in a small bowl, set in the fridge for 15 minutes prior to mixing into the batter
1/2 c date paste – I use 8 medjool dates blended with 1/2 c hot water, then measure out 1/2 c paste
1 1/2 c almond milk
1 c blueberries
Crumb topping:
1/2 c whole grain rolled oats, ground into flour
1 1/2 c whole grain rolled oats
1/2 c date paste – I use 8 medjool dates blended with 1/2 c hot water, then measure out 1/2 c paste
1 tbsp vanilla extract
