Vegan Caesar Dressing with Kale and Parmesan
Creamy, garlicky, spicy and full of lemony, briny flavor, this vegan Cesar dressing is delicious on any variety of greens, but especially romaine or kale, or as a dip.
For the Dressing:
3/4 C (106g) Raw Cashews, soaked in water overnight, rinsed and drained
3/4 C (170g) Water
2 Tbs Fresh Lemon Juice
2 (18g) Large Cloves of Garlic (Increase to 3 cloves (27g) to taste)
2 Tbs (24g) Capers
1/2 tsp Ground Black Pepper
1/4 + 1/8 tsp Sea Salt
1/4 C (46g) Extra Virgin Olive Oil
For the Parmesan:
1/2 C (66g) Raw Cashews
2 Tbs (8g) Nutritional Yeast
1/2 tsp Sea Salt
1/4 tsp Garlic Powder
For the Salad:
5 oz (142g) Russian Red or Baby Kale, washed and torn into bite size pieces
