Vegan Caesar Salad
Vegan Caesar Salad – Dressing made with raw cashews, lemon juice and garlic – Topped with hemp seeds, avocado and capers
Dressing:
½ cup raw cashews
¼ cup water, plus additional as needed to thin dressing to desired consistency
3 tbsp extra-virgin olive oil
4 tbsp fresh lemon juice
3 tbsp nutritional yeast
1 large garlic clove, smashed
1 tsp salt
Freshly ground black pepper
Salad:
2 large heads romaine lettuce, chopped into bite-size pieces
1 ripe avocado, chopped
½ cup hemp seeds
⅓ cup capers, drained and rinsed
Croutons:
3 tbs extra-virgin olive oil
1 large clove garlic, crushed and peeled
2 to 3 cups bread cubes
½ tsp. kosher salt
