Vegan Chocolate Chip Cookies
Vegan chocolate chip cookies! With chewy, crisp edges and soft centers, these cookies are perfect for any occasion. Made with just 5 ingredients, they’re healthy, gluten free and naturally sweetened!
2 1/2 c whole grain oats, ground into flour
1 c date paste – I use 16 medjool dates blended with 1 c hot water, then measure out 1 c paste for the cookie dough
2 flax eggs – 2 tbsp ground flaxseed in a small bowl with 6 tbsp water, set in the refrigerator for 15 minutes prior to mixing into the cookie dough
1 tbsp vanilla extract
Date chocolate chips – chop up 5 large medjool dates into very small pieces and roll in cocoa powder (or your favorite brand of dairy free chocolate chips!)
