Vegan Cinnamon Raisin Walnut Cookies

Puffy, soft vegan cinnamon raisin walnut cookies are a perfect fall treat. These cookies are made with just 6 healthy ingredients, they’re gluten free, and fruit sweetened.
Ingredients
2 c buckwheat flour
1 1/2 c date paste – I use about 20 dates blended with 1 1/2 c hot water, then measure out 1 1/2 c paste
2 flax eggs – 2 tbsp ground flaxseed in a small bowl with 6 tbsp water, set in the fridge for 15 minutes
1 tbsp cinnamon
1/2 c raisins
1/2 c walnuts
