Vegan & Gluten-Free BBQ Chickpea Pizza with Ranch Dressing
Finally a vegan and gluten-free pizza that doesn’t taste like cardboard! This easy bbq chickpea pizza is loaded with layers of flavor and topped with a simple vegan ranch dressing you’ll want to put on everything. Three cheers for pizza night!
For the Crust:
3 cups gluten-free flour blend (I used 1 cup each: sorghum flour, brown rice flour, tapioca flour + 3/4 teaspoon xanthan gum), plus extra for rolling out the dough
1 packet active dry yeast
1 teaspoon fine grain sea salt
1 cup warm filtered water (it should be about 115 degrees F)
2 tablespoons extra virgin olive oil, plus more for greasing the bowl
For the Ranch Dressing:
1/2 cup raw cashew pieces, soaked for 2 hours, rinsed well and drained
1/4 cup filtered water
2 tablespoons nutritional yeast
2 tablespoons apple cider vinegar
1 tablespoon dried chives
½ teaspoon each: garlic powder, onion powder, dried dill, dried parsley
1/2 teaspoon fine grain sea salt
For the BBQ Chickpeas:
1 1/2 cups cooked chickpeas (or one 15-ounce can, rinsed and drained)
1/3 cup bbq sauce, plus extra for brushing over the pizza dough
2 teaspoons extra virgin olive oil
1 large garlic clove, minced
For the Toppings:
1/2 medium red onion, chopped
1 small avocado, pitted, peeled and chopped
2 small handfuls fresh parsley, chopped
