Vegan & Gluten-Free Chocolate Chip Oatmeal Cookie Pancakes
Your favorite chocolate chip oatmeal cookies in a vegan and gluten-free pancake form! Just 10 ingredients, 1 bowl, and under 30 minutes to make a big batch.
1 flax egg (1 tablespoon flax seeds, freshly ground + 3 tablespoons warm water)
1 1/2 cups gluten-free oat flour (or you can simply grind rolled oats into flour in your blender)
1/2 cup gluten-free rolled oats
1 tablespoon baking powder
1 teaspoon ground cinnamon
½ teaspoon fine grain sea salt
1 1/2 cups non-dairy milk (I used cashew milk)
1 tablespoon melted unrefined coconut oil, plus extra for greasing the pan
1/2 teaspoon pure vanilla extract
1/2 cup vegan chocolate chips
