This tomato based garbanzo bean soup is full of vegetables and the twist of fennel seed will keep you taste buds dancing the whole bowl through.
Ingredients
1/2 cup garbanzo beans, dried
1 tbsp. extra-virgin olive oil
1 onion, finely chopped
3 garlic cloves, minced
2 carrots, medium sliced
3 celery stalks, medium sliced
1 tsp. fennel seed
1 – 14.5 oz. can fire roasted organic diced tomatoes
3 cups vegetable broth
18-20 grape tomatoes, sliced in half, length wise
2 hand full of fresh baby spinach
1 tsp. fresh oregano (or dried)
½ tsp. fresh thyme (or dried)
1 tbsp. fresh parsley, chopped (or dried)
Salt and pepper, to taste
