Vegan Peanut Butter Banana Muffins
Here’s a delicious vegan and gluten-free muffin recipe. It contains four of my favorite things: chocolate, bananas, peanut butter and coconut milk! These are my favorite muffins so far. What’s more, you need very few ingredients and just a little time to make them, and they taste amazing. I didn’t use any additional sweetener, because bananas are sweet enough for me, but if you want, you could add some.
1 1/2 cups of flour (I used even parts rice flour and oat flour)
1 – 1 ½ bananas (depending on their size)
1 teaspoon baking powder
½ cup of coconut milk (or other milk of your choice)
4 tablespoons of peanut butter
Some chocolate chips or chopped chocolate
Sweetener of your choice – optional
