Thick, soft, vegan peppermint mocha cookies! Full of chocolate and peppermint flavor, they’re even better than your favorite holiday drink. Made with just a few healthy ingredients, gluten free, and naturally sweet!
1 3/4 c buckwheat flour
1/4 c cocoa powder
2 tbsp espresso or instant coffee powder
1 1/2 c date paste – I use about 20 medjool dates blended with 1 1/2 c hot water, then measure out 1 1/2 c paste
2 flax eggs – 2 tbsp ground flaxseed in a bowl with 6 tbsp water, set in the fridge for 15 minutes
1 tsp peppermint extract
1/2 c vegan chocolate chips
