This red lentil soup is very simple, flavorful, nutritious and easy to throw together with bare minimum of ingredients. Only bay leaves and cumin seeds create irresistible aromatic and melodious red lentil curry soup with high level of nutritional values.
Ingredients
1½ cup red lentil (masoor dal) soaked for 1 hour (not necessary)
2 tbsp olive oil (must)
⅓ cup finely chopped onion
2 cloves garlic minced
2 bay leaves (must)
1 tsp cumin (seeds or powder)
1 tbsp red chili powder
salt to taste
½ tsp black pepper powder (optional)
1 tbsp tomato ketchup (or tomato puree)
fresh coriander leaves for garnish
