This colorful Southwest salad makes a hearty meal in under 15 minutes. The avocado chipotle dressing is so creamy and flavorful it’s hard to believe the whole thing is vegan and gluten-free.
Ingredients
1 head romaine, rinsed, dried, and outer leaves removed
1 c canned no-salt-added black beans, drained and rinsed
2 c frozen corn
1 yellow bell pepper, diced
1 c grape tomatoes, halved
1/4 c red onion, diced
1/4 c cilantro, chopped
1 avocado, diced
Dressing:
1/4 avocado
1 chipotle pepper, or to taste
1/4 c olive oil
1 tbs red wine vinegar
juice of 1 lime
1 tsp sugar
salt and pepper, to taste
