Vegan Strawberry Crumb Bars
Thick, gooey bars topped with sweet strawberries and chewy crumb topping! These vegan strawberry crumb bars are spring in a pan, and a texture lover’s dream. Healthy, gluten free and naturally sweetened.
Bars:
1 can chickpeas, drained
1 c almond milk
1 c date paste – I use 16 medjool dates blended with 1 c hot water, then measure out 1 c paste
1 c whole grain rolled oats, ground into flour
1 1/2 c strawberries, chopped
Crumb topping:
1 1/2 c whole grain rolled oats
1/2 c whole grain rolled oats, ground into flour
1/2 c date paste – I use 8 medjool dates blended with 1/2 c hot water, then measure out 1/2 c paste
1 tbsp vanilla extract
