Delicious, hearty vegan stew that is comforting, filling, and perfect for a chilly night at home.
Ingredients
3 tablespoons olive oil
1 medium yellow onion, diced
3 large carrots, diced
3 stalks celery, diced
4 cloves garlic, minced
4 cups vegetable broth
2 cups water
1 15-ounce can fire-roasted tomatoes (not drained)
1 cup green lentils, rinsed
3 medium sweet potatoes, peeled and cubed
2 teaspoons cumin
1½ teaspoons turmeric
1 teaspoon curry powder
½ teaspoon oregano
½ teaspoon thyme
1 bunch collard greens, stem and ribs removed and cut into thin ribbons
Pinch chili flakes
