This beautiful pizza is topped with delicious veggies with a sunny side up egg on a crunchy, tasty and healthy quinoa crust.
Ingredients
1 cup quinoa
2 cups vegetable stock
2 tbsp flax seeds
2 tbsp warm water
60g mushrooms
1 carrot
1/2 small onion
1 small eggplant
1/4 cup kalamata olives
2/3 cup tomato sauce
1 egg
big handful of arugula
70g mozzarella
salt & pepper
