Wake and Bake Vegan Breakfast Cookies

Vegan breakfast cookies filled with oats, raisins, coconut, pumpkin seeds and chocolate! Who doesn’t like cookies for breakfast?
Ingredients
1/4 cup applesauce
2 tbsp. almond butter
3/4 cup brown sugar
2 tbsp. ground flax seed
1 tsp. vanilla
3/4 cup all purpose flour
1/4 cup bran
1 cup rolled oats
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 cup shredded coconut
1/4 cup pumpkin seeds
1/4 cup raisins
1/4 cup vegan chocolate chips (or chopped chocolate)

Funny you say that, I went to look for them in the fridge and apparently someone had thrown them out because they were old. Next time though!
